Le blanc et le bleu sont à l'honneur, mais pour ma part, j'ai choisi d'y aller pour le goût du Québec plutôt que la fleur de lys. Et c'est donc le sirop d'érable et les bleuets qui sont à l'honneur!<br /><br />Le gâteau est un simple gâteau blanc, Julie Hasson, p. 104. J'ai réduit le sucre à 1/2 tasse et mon idée était d'utiliser de l'extrait de vanille plutôt que de l'extrait d'amande mais j'ai complètement oublié!! À la sortie du four, j'ai versé du sirop d'érable sur les cupcakes (environ 1 c.à thé), j'ai mis un peu de pralin de noisettes et j'ai dresser avec un glaçage au beurre saveur érable et cannelle. On y ajoute un bleuet, et voilà! I decided to put aside the traditional fleur de lys for a true Quebec taste: maple syrup and blueberries.<br /><br />The cake was a basic white cake, very nice and fluffy, from Julie Hasson book "125 Best Cupcake Recipes", p. 104. I reduce the sugar to 1/2 cup and wanted to use vanilla instead of almond extract but I completely forgot! Sans plus tarder, voici la recette:<br /><br /><span style="color: rgb(51, 51, 153);font-family:georgia;font-size:180%;" >Ganache montée au chocolat blanc</span><br /><span style="font-weight: bold;">Ingrédients:</span><br />175g de chocolat blanc haché, râpé ou en morceaux<br />315mL de crème 35%<br /><br /><span style="font-weight: bold;">Méthode:</span><br />1. Mettre le chocolat dans un bol. Faire chauffer 125mL de crème jusqu'au point d'ébullition. Verser sur le chocolat. Mélanger à la cuillère jusqu'à ce que le chocolat soit fondu. Ajouter le reste de la crème, mélanger et mettre le tout au réfrigérateur pendant 4 heures (ou pour la nuit, l'important c'est que le mélange soit bien froid - 1 heure au congélateur ça fonctionne aussi).<br />2. Fouetter au batteur jusqu'à consistance épaisse et décorer vos gâteaux! It is quickly becoming one of my favourite. Less sweet then our traditionnal buttercream and very fresh. À chaque fois que je l'a fait, on me demande la recette... Et je leur réponds: je vais la mettre sur mon blogue! Et voilà! Je le fais.<br /><br />C'est une recette qui me vient de mon amie Jennifer. Je l'ai adapté un peu, en diminuant la quantité de beurre mais surtout dans la méthode. J'utilise la méthode à sec, comme vous verrez. Et je vous explique par la suite les différentes variations que l'on peut faire avec la recette.<br /><br /><span style="color: rgb(51, 51, 153);font-family:times new roman;font-size:180%;" >Muffins aux bananes</span><br />12 gros muffins<br />préchauffer le four à 180°C (350°F)<br /><br /><span style="font-weight: bold;">Ingrédients:</span><br />360 g de bananes mûres écrasées (3-4 bananes)<br />50 g de son<br />165 g sucre<br />200 g de farine<br />2 tsp de poudre à pâte<br />1 tsp de cannelle<br />1/2 tsp de bicarbonate de soude<br />1/2 tsp de sel<br />100g de beurre mou<br />2 oeufs<br /><br /><span style="font-weight: bold;">Méthode:</span><br />1. Préparer le moule à muffins. Dans une grande assiette, écraser les bananes et y ajouter le son. Laisser reposer pendant que vous préparez le mélange de farine.<br /><br />2. Dans le bol du malaxeur, mettre tous les ingrédients secs (farine, sucre, poudre à pâte, canelle, bicarbonate, sel) et le beurre. Battre à basse vitesse jusqu'à ce que le beurre soit bien incorporé dans le mélange de farine. Ajouter les œufs, un à la fois. Puis incorporer le mélange de bananes. Mettre le mélange dans les caissettes, soupoudrer de flocons d'avoine et sucre demerara, cuire 15-20 minutes.<br /><br /><span style="font-weight: bold;">Variations:</span><br />Je m'amuse à varier les sucres. Pour la même quantité de sucre (165g), je mélange cassonade, sucre blanc, demerara au goût du jour. Et en général, pour la même quantité de son, j'utilise aussi des flocons d'avoine et/ou des graines de lin moulu. Cette fois-ci, j'ai ajouté 1 c. à soupe de liqueur de chocolat et cappuccino. An excellent cupcake recipe from Julie Hasson's book (125 Best Cupcake recipes), the Kalhua cupcake on page 80.<br /><br />An excellent cake, very moist, the Kahlua is not overwhelming. From the original recipe, I reduce the sugar to 2/3 of cup and I didn't use coffee. I was a little worried about the chestnut spread, I had been looking for weeks and couldn't find any in the regular grocery stores. But a few days before Christmas I found some. Yess!! :o)<br /><br />You will have find the recipes below.<br /><br /><span style="color: rgb(153, 51, 153);">********</span><br /><br /><span style="color: rgb(51, 51, 153); font-family: georgia;font-size:180%;" >Bûche de Noël</span><br /><br /><span style="font-weight: bold;">Ingrédients:</span><br /><span style="font-size:130%;">pour le gâteau roulé:</span><br />3 oeufs<br />210g de sucre<br />1 1/2 c. à thé de vanille<br />120g de farine<br />16g de fécule de maïs<br />2 c. à thé de poudre à pâte<br />1/4 c. à thé de sel<br />125mL de lait<br />14 g de beurre<br />250mL de crème de châtaignes<br /><br /><span style="font-size:130%;">pour la glace au chocolat:</span><br />60g de chocolat noir<br />54g de beurre non-salé<br />2 c. à table de lait<br />150g de sucre en poudre<br />1/4 c. à thé de vanille<br />1/8 c. à thé de sel<br />2 piments pili-pili, enlever les graines et émincer<br /><br /><span style="font-weight: bold;">Instructions:</span><br /><span style="font-size:130%;">Pour le gâteau:</span><br />1. Préchauffer le four à 200°C (400°F). Graisser une plaque à biscuits de 35cm x 25cm, doubler le fond de papier parchemin, graisser et enfariner.<br /><br />2. Faire chauffer le lait sans le faire bouillir et ajouter le beurre - il doit fondre. Tamiser la farine, la fécule de maïs, la poudre à pâte et le sel 2 fois (1 fois seulement si la farine est pré-tamisée). Battre les oeufs au malaxeur jusqu'à ce qu'ils soient mousseux et de couleur crème (environ 4 min). Ajouter graduellement le sucre en battant après chaque addition. Ajouter la vanille.<br /><br />3. Incorporer délicatement les ingrédients secs au mélange. Incorporer le mélange de lait chaud, remuer jusqu'à ce que tout le liquide soit absorbé. Verser uniformément la pâte dans le moule. Faire cuire au milieu du four pendant 15 minutes ou jusqu'à ce que le gâteau soit brun et doré.<br /><br />4. Préparer un linge de vaisselle soupoudré de sucre à glacer. Démouler le gâteau sur le linge, retirer le papier ciré et tailler les 4 côtés. Soupoudrer le gâteau de sucre à glacer et enrouler rapidement le gâteau dans le linge. Laisser refroidir 15 minutes. Dérouler le gâteau, garnir de crème de châtaignes, rouler de nouveau (sans le linge) et couvrir d'une serviette. Laisser refroidir.<br /><br /><span style="font-size:130%;">Pour la glace:</span><br />1. Fondre le chocolat et le beurre au bain-marie. Ajouter le lait et les piments et retirer du feu. Ajouter le sucre à glacer, la vanille et le sel. Battre jusqu'à consistance lisse. Éclaircir avec de la crème si nécessaire. Dessert ou p'tit dèj? Chez nous, le temps de se poser la question et on y avait répondu: p'tit dèj et on sert le cupcake avec du sirop d'érable évidemment!<br /><br />J'ai fait cette recette toujours lors de la visite de ma cousine et son fiancé. On a eu bien du plaisir à prendre les photos, surtout avec le sirop d'érable qui coulait, il fallait avoir le bon timing!<br /><br />De la recette originale, j'ai diminué le sucre de moitié et j'ai utilisé du vrai sirop d'érable plutôt que de l'extrait. J'ai fait ce cupcake en mai dernier lors de la visite de ma cousine et son fiancé.<br /><br />En lisant la recette, j'ai tout de suite décidé de mettre le mélange de Streusel sur le dessus du cupcake et non au centre comme indiqué, et j'ai augmenté la quantité de cannelle (1 c. à tble plutôt qu' 1 c. à thé). J'ai aussi diminué la quantité de sucre dans le gâteau, et j'ai fait un coulis de caramel pour glacer. And happy to be! Only a few boxes left (I would say about 20, which might seem a lot but I had over 300 I think!).<br /><br />This new cupcake from Julie Hasson's book, Chocolate Cinnamon on p. 89 has no eggs. I think it's the first time I bake a cake with no egg. To a suggestion of one of my fellow bakers, I beat the sugar and liquids a lot to make the cake fluffy before adding the flour mixture. It turned out ok. It tastes good, the texture is not too dense, but the cake crumbles. I iced it with my special glaze I use for the Christmas log. Je restais chez mes parents et j'ai demandé à mon papounet de choisir un cupcake pour le challenge. Son choix c'est rapidement porté sur le cupcakes Brownies et café. Miam! </div><div><br /></div><div>Ce cupcake était très bon. Moelleux, chocolaté avec une touche de café. J'ai utilisé la recette de Julie Hasson p.28 "Chocolate Surprise Cupcakes" en omettant la "surprise" (une guimauve à l'intérieur parce que je n'en avais pas sous la main) et en remplaçant la farine pour une farine sans gluten. It's an occasion not to be missed, and the perfect one for me to do what I love: cupcakes! She had a special request: chocolate cupcakes. I had just tried a chocolate recipe from Julie Hasson's book so I decided to redo it and adapt it to my needs (gluten free). I simply replace the flour by a gluten free flour and it did the trick. The icing is one of my favourites: spicy chocolate swiss meringue buttercream (I use a hot pepper dark chocolate). </div><div><br /></div><div><b>Swiss Meringue Buttercream</b></div><div>J'utilise la méthode 1,2,3 de Diann Bakes et je l'ai adapté en grammes, beaucoup plus simple à mon avis.</div><div><br /></div><div>Vous aurez besoin d'un malaxeur, une balance, un bain-marie et un fouet.</div><div><br /></div><div>Comme ingrédients:</div><div><ul><li>1 quantité de blancs d'oeufs</li><li>2 quantités de sucre blanc</li><li>3 quantités de beurre (non salé, à la température ambiante)</li></ul></div><div>Pour glacer 24 gros cupcakes, j'utilise 3 blancs d'oeufs (environ 112g).</div><div><br /></div><div><ol><li>Dans le bol du malaxeur, peser une quantité de blancs d'oeufs. Ajouter le double de cette quantité en sucre blanc (environ 224g).</li><li>Mettre le bol du malaxeur au bain-marie. Avec un fouet, brasser pour ne pas que les blancs cuisent. Faire chauffer le mélange jusqu'à ce que le sucre soit dissout (le mélange sera alors pasteurisé).</li><li>Battre le mélange à haute vitesse au malaxeur avec le fouet, jusqu'à ce que le mélange tiédisse. Le mélange sera comme de la guimauve molle.</li><li>Pendant ce temps, préparer le beurre (peser 3 fois la quantité de blancs d'oeufs - environ 336g, et couper le beurre en cubes).</li><li>Lorsque le mélange des oeufs est prêt, enlever et secouer le fouet pour enlever l'excédent de mélange. Mettre le batteur, à faible vitesse ajouter le beurre petit à petit. Le mélange perdra de sa belle consistence. Ne vous inquiétez pas, continuer de battre en augmentant un peu la vitesse et il reprendra sa consistence. Ajouter colorant et essence au goût (vanille, citron, orange).</li></ol><div>VARIATION:</div><div>Pour un glaçage au chocolat, faire fondre au bain-marie du chocolat noir (moi j'aime bien celui au piment fort) en double quantité des blancs d'oeufs. Laisser tiédir et incorporer à la spatule une fois l'étape 5 terminée. Si le chocolat est trop chaud, le glaçage sera trop liquide. I had different recipes before, and sometimes the icing worked, and sometimes not. But, since I discovered <a href="http://www.youtube.com/watch?v=uBBoRMWcfNc&playnext_from=TL&videos=acbeEQ34hb4">Diann Bakes video</a>, it's full proof. So if you're interested in this icing, please watch the video.</div><div> </div><div>If, like me, you like the metric system, instead of doing ounces like Diann does, you just need to weight the egg whites, then double for the sugar and triple for the butter.</div><div><br /></div><div>If you want to pipe this icing, reduce the quantity of butter (if you should add 300g, just add 250g).</div><div><br /></div><div>If you want to do a chocolate version of it, melt your favourite dark chocolate (double the weight of the egg whites), let it cool a little and add it with a spatula to the icing.
